Seafood Medley Recipe

Fresh seafood medley recipe is really easy to prepare. A quick, delicious meal for your breakfast. I came across the Mediterranean mixed sea food medley version during my travels abroad.

INGREDIENTS Of Seafood Medley

  • 28 ounce can diced tomatoes
  • 1 teaspoon salt mix
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter
  • 2 lbs fresh mussels
  • 3/4 lb large shrimp
  • 3/4 lb squid
  • 3/4 lb dry-packed sea scallops
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup onion, chopped
  • 4 to 5 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

INSTRUCTIONS: How To Prepare, Cook Seafood Medley?

  1. Rinse the mussels under cold water and use kitchen shears to trim any beards.
  2. Leave the tails on the shrimp after peeling and deveining them.
  3. Stir in the mushrooms and garlic until well combined.
  4. Then, except for the shrimp, add all of your main seafood. (Note: The shrimp will be added in the last few minutes or so.)
  5. Rinse the squid and remove the “cartilage” from the tubes’ interior. Separate the tentacles and cut the tubes into 3/8-inch thick rings.
  6. Heat the olive oil over medium heat, then add the onion and cook for 2 minutes, or until soft and translucent.
  7. Cook until the garlic is soft, about 2 minutes more. Cook for 5 minutes, stirring occasionally, after adding the tomatoes, salt, and pepper.
  8. In a large pot with a steamer insert, bring about 2 inches of water to a boil.
  9. Cover and cook until all of the mussels have opened.
  10. Remove from the heat, cover with a lid, and set aside.
  11. Increase the heat to medium-high and wait for the tomato sauce to begin to simmer before adding the shrimp.
  12. Cook for 2 minutes, or until the shrimp are translucent around the edges.
  13. Cook for 1 minute more after adding the squid.
  14. Cook until the butter has melted and the seafood is cooked through, then add the scallops and butter. The total cooking time should not exceed 5 to 6 minutes.
  15. To serve, spoon polenta into the bottoms of six shallow bowls.
  16. Place a mussel around the outside of each bowl, then spoon the seafood tomato mixture in the center.
  17. Serve immediately with fresh parsley on top.
  18. You will cook this approx 10 minutes
