Coconut Rice With Scallions & Red Beans Recipe

This flavorful colorful Coconut Rice With Scallions & Red Beans and red bean dish from Honduras and Nicaragua’s Caribbean coast. With a combination of coconut oil and coconut water, we approximate the delicate sweetness and subtle richness of fresh coconut milk; unrefined coconut oil lends the most flavor, but regular refined oil also works.

INGREDIENTS Of Coconut Rice With Scallions & Red Beans

  • 3 tbsp melted coconut oil, preferably unrefined
  • 4 finely chopped medium garlic cloves
  • 1 small stemmed, seeded, and chopped red bell pepper
  • 1 1/2 cups rinsed and drained long grain white rice
  • 1 bunch thinly sliced scallions
  • 2 tbsp fresh cilantro stems, minced
  • 2 rese 1 1/2 cup chopped fresh cilantro leaves a half cup coconut water
  • 1 teaspoon cumin 1 teaspoon white sugar
  • Kosher salt and black pepper, to taste
  • 15 1/2 oz can rinsed and drained small red beans or kidney beans

INSTRUCTIONS: How To Prepare Coconut Rice With Scallions & Red Beans?

  1. Stir together the oil, rice, scallions, garlic, bell pepper, and cilantro stems in a 6-quart Instant Pot.
  2. Combine the coconut water, cumin, sugar, 2 teaspoons salt, and 1 teaspoon pepper in a mixing bowl.
  3. Stir to combine, then spread the mixture out evenly.
  4. Bring the mixture to a boil by selecting More/High Sauté.
  5. Cancel the operation, then lock the lid in place and turn the pressure valve to Venting.
  6. Set the temperature to Less/Low and select Slow Cook. Set the timer for 2 to 2 1/2 hours; the rice is done when the liquid has been absorbed and the grains have become tender.
  7. Cancel the operation, then carefully open the pot.
  8. Close the lid and turn the pressure valve to the Sealing position. Choose Pressure Cook or Manual and set the pressure to Low.
  9. Set the timer for 10 minutes. After the pressure cooking is finished, quickly release the steam by turning the pressure valve to Venting.
  10. Cancel the operation, then carefully open the pot.
  11. Remove the insert from the housing with potholders. Spread the beans over the surface of the rice without fluffing it, then drape a kitchen towel across the top and re-cover without locking the lid in place.
  12. Allow for a 10-minute resting period. Uncover and stir in the cilantro leaves, then fluff the rice with the beans and cilantro.
  13. Season with salt and pepper to taste.
