This is an easy, tasty and healthy recipe of Avocado Corn Salad, you can add some sweet corn, onion, spices & cucumber. A perfect quick side dish for your next meal. Taste for seasonings and serve, can be used as a side dish for all your guests, you can try for lunch and dinner.
1 1/2 cups of water
3 ears flavorful corn, shucked and halved
1 medium lime juice and zest
a quarter cup olive oil
1/4 teaspoon salt 1/4 teaspoon black pepper
2 medium ripe avocados, peeled, pitted, and diced
1/2 cup English cucumber, diced
1 cup cherry tomatoes, halved
Fill the Instant Pot halfway with water and corn. Close the lid.
Set the timer to 2 minutes and press the Manual or Pressure Cook button.
When the timer beeps, release pressure quickly until the float valve drops. Remove the lid.
Transfer the corn to a serving dish and set aside until cool enough to handle. Remove the kernels from the cobs.
In a large mixing bowl, combine lime juice and zest, oil, salt, and pepper.
Combine the corn, avocados, cucumber, and tomatoes in a large mixing bowl.
Refrigerate until ready to serve, covered.
Chill before serving.
