Avocado Corn Salad Recipe

INGREDIENTS Of Avocado Corn Salad

  • 1 1/2 cups of water
  • 3 ears flavorful corn, shucked and halved
  • 1 medium lime juice and zest
  • a quarter cup olive oil
  • 1/4 teaspoon salt 1/4 teaspoon black pepper
  • 2 medium ripe avocados, peeled, pitted, and diced
  • 1/2 cup English cucumber, diced
  • 1 cup cherry tomatoes, halved

INSTRUCTIONS: How To Prepare Avocado Corn Salad?

  1. Fill the Instant Pot halfway with water and corn. Close the lid.
  2. Set the timer to 2 minutes and press the Manual or Pressure Cook button.
  3. When the timer beeps, release pressure quickly until the float valve drops. Remove the lid.
  4. Transfer the corn to a serving dish and set aside until cool enough to handle. Remove the kernels from the cobs.
  5. In a large mixing bowl, combine lime juice and zest, oil, salt, and pepper.
  6. Combine the corn, avocados, cucumber, and tomatoes in a large mixing bowl.
  7. Refrigerate until ready to serve, covered.
  8. Chill before serving.
